Chicken is without a doubt my favorite ingredient for a comforting, weeknight dinner that tastes like it was made on Sunday afternoon. Here are five of my favorite chicken recipes from some of my favorite food bloggers or foodie sites from across the internet.
All of these can be whipped up in less than 45 minutes!
1. Chicken Marsala sans mushrooms – How Sweet Eats
This recipe is also great with mushrooms! Try adding baby portabello mushrooms to a bit of butter and saute on med heat for 10 minutes until the mushrooms are carmelized. Top the chicken with the mushrooms and enjoy!
2. Creamy Romano Chicken and Farro – Picky Palate
We loved this recipe! Use the Trader Joe’s 10-minute farro, which cooks up to be tender and chewy just like the farro that takes 30-4o minutes to cook.
3. Copy-Cat Chipotle Chicken Burrito Bowls – Iowa Girl Eats
This is a another great recipe that you can control the serving size, rather than eating Chipotle’s huge restaurant-sized portion. Plus, as IGE says, by making the chicken yourself you know that the chicken won’t be funky. We’ve all had a questionable piece of chicken in our Chipotle burrito bowl.
4. Stovetop Baked Mozzarella Chicken – Stove Top Recipes
I mean who doesn’t love a little Stove Top stuffing? While not really a healthy recipe, this is comfort food at its finest! The chicken cooks up nice and moist, and the stuffing provides for a crunchy topping.
5. Ritzy Cheddar Baked Chicken – Menu Musings
We just tried this recipe last week, and I was surprised by how easy and healthy it turned out to be. Definitely sub in the plain greek yogurt for the sour cream – you’ll never taste the difference!
